Viña Maipo was founded in 1948 in the Maipo Valley, renowned worldwide as Chile’s most famous wine growing region. The Protegido (which means "Protected" in Spanish) originates from the vineyard of Quinta de Maipo in 2008. The name originated from a belief that the vineyards are miraculously protected for centuries by angels in answer to the people's prayers. The winery is currently a part of Concha y Toro and harvests from a single plot called Block 7 is used for this bottle.
Rocks from the Andes Mountains were dragged down by the Maipo River, influencing the region's soils to become rocky, resulting in low fertility and excellent drainage. Combining the soil with the river basin's cool breezes awards this Cabernet Sauvignon with its best possible expression.
The wine has a concentrated expression of ripe fruits, intense black cherries & cassis. A wine with multiple flavours, layers and complexity, it is juicy and full bodied. Essences of mocha, dark chocolate, cedar and graphite intermingles with copious amount of spices such as paprika, red bellpepper and rosemary herbs on the palate. A pleasing acidity delivers a long and persistent finish.
Decanting the bottle 30 minutes before serving in a big Bordeaux glass will help to further introduce the flavours.
Harvested from the vineyard of Quinta de Maipo, where first and most valued vines are grown, this top quality Cabernet Sauvignon pairs best with steaks. A grilled beef Scotch Rib Eye with caramelized onions is an excellent recipe to savour the wine with. When served with a cheese board, enjoy a glass of Protegido with generous portions of Gruyere or Edam Cheese.
