It all began with Pauline, the great-grandmother of Eric, who in 1860 sold her wine at markets. "Les Celliers de la Pauline” (Pauline’s Cellars) owe their name to her. Then her son, Julien, with his wife Louise, took up the torch after Pauline, caring for the vineyard and following the same traditions of love and respect of the vine. As the heir of all of these traditions, Eric Louis is the 4th Generation of winemaker who craft family wines! In Greek, the name Sophie means wisdom. This name inspired the Domaine de l'Abbaye de Saint-Pierre owner Sophie Bertin and the winemaker Eric Louis to create a style of wine that is elegant and pure that showcased the more feminine and fine style of Pouilly-Fumé. Grown on the steep slopes of Sancerre and by wisely selecting the best fruit from the vines, this wine is a perfect example of Sauvignon Blanc from the Loire Valley's finest vineyards.
This wine has a pale gold which has a beautiful shine and a fine nose of citrus and green apple. The characteristic notes of flinty minerals relate to the soil where the grapes are grown. This all combines to give an amazing freshness and roundness. Great for sharing with a group of friend by a hot afternoon!
Its crisp refreshing acidity make it an ideal match to seafood, salad or simply by itself. Shellfish, goat-cheese, roasted pork or quinoa with coconut milk are also great matches for this unparalleled fine wine!
