Domaine Heimbourger is located in the heart of Burgundy, in the region of Saint-Cyr-les-Colons between the two appellations of Chablis and Irrancy. The vineyards are located on the slopes of the south and southeast hillsides. The terrior of the slopes contains clay-limestone characteristics known as "Kimmeridgian", characterised by ammonites and fossilised oysters!
The winery has been under the care of the Heimbourger family for 3 generations, with integrated farming methods being practiced for the past 15 years to preserve the terrior, all for the sole purpose of producing quality wines!
Bright straw yellow in colour, this bottle of chardonnay from Chablis has rich mineral flavours from the limestone-clay terrior. Notes of lemon, butter, hazelnuts and white flowers accompany the wine's wonderful minerality. Great for drinking now!
Rich seafood dishes, especially fish dishes such as salmon or tuna will make a great pairing with a glass of nicely chilled Chablis. Pan-seared scallops is another sure-fire match. For cheese pairing options, stick to creamy, soft cheese to allow the wine to really shine. Classic cheese pairings include camembert and brie.
