Since 1959, the Torello Mata family has been dedicated to making Cava one of the finest and most elegant bubbles the world has ever seen. Cavas are, required a minimum of 15 months of maturation to become Reservas and at Augusti Torello Mata, the most basic Brut Reserva comes in at 24 months of maturation. The belief in the rewards of time has set this Cava apart from the rest. Pale yellow with bright hues of straw, the bubbles are fine and consistent in the glass.
White peach, hibiscus and cracked almond biscuits envelope the nose. On the palate, a steady stream of bubbles gentle like a brook, carrying lemon skin, white apples and spring flowers comfort the senses. A clean and pristine minerality accompanied with a nice medium plus finish of biscotti and nutshells linger towards the end.
Best paired with light cheeses, soft with hints of savory nut like Reblochon. Vol-au-Vents with touches of mushroom and lightly smoked seafood served in small cuts. Asian recommendations include dim sum items like pan-fried white radish cakes, or crispy beancurd skin rolls stuffed with chive and shrimps.
