The Wine
Simon Waghorn, founder, owner and winemaker of Astrolabe sees through all the crazy wines experimented on and produced at Astrolabe. Drawing on his team which includes the famous Jeremy Hyland, a seasoned viticulturist in the NZ wine scene. Sourcing fruit from different parcels, and each fermented individually with indigenous and/or cultured yeasts before blending as one or a single expression. Astrolabe’s wines are always an experiment and an experience in the mouth.
Tasting Notes
The 2013 Pinot Noir expresses dark cherry, a soft juicy plum character before melting down into a lovely caressing texture of soft cinnamon and cardamom spices. Firm acids excite the palate with a medium plus finish of fresh red fruits and soft spice.
Food Pairing
A beautiful match with confits of pork and duck highlighted with berry-based compotes or sauces. Rillettes, terrines are lovely and so are light stews of spicy sausages or fowl. Spiced-up pastas with grilled seafood are good as well. Tandoori Marsala rubbed meats or fish would be excellent with this Pinot.
