Fazil has not always walked down the path of wine. He first pursued a Diploma in Economics at The Stansfield School of Business (London) and graduated in 2003, to only then realize that he wanted to pursue his fascination and adoration for wine. His humble beginnings as part-timer in some of Singapore’s top restaurants sparkled his passion for wine. Fazil achieved the World Gourmet Summit Scholarship in 2009 and an accredited Certified Sommelier by the world renowned Court of Master Sommelier, UK . He then completed WSET L3 as well as the CSW, and secured a Sommelier Diploma from the Sommelier Association of Italy. He is now one of Singapore’s most reputable Sommelier and currently works for Luke Mangan’s Salt & Grill Sky Bar!
When did you first discover your love for wine?
When I finally realised that all that aromas people were talking about were real! It was an epiphany and I knew I had to learn more about it.
What is your favorite wine/grape?
It’s hard for me to decide. At the moment, I am drinking Eben Sadie Skurberg which is a 100% Chenin Blanc and Chris Ringlang’s Barossa NBV Shiraz. Those are my kinds of wine. I like big, bold, heavy body wines with a strong backbone minerality to support them !
Who is your Palate Icon ?
If I have to go local, it would be Tan Ying Hsien. He has coached a lot of people in tasting and loves to share his knowledge about wine. I am constantly amazed by how he can perfectly describe a wine, and how he manages to find the reasons for why each wine has its own distinct aromas. He is so clear about what a classic style should be that it makes each wine easy to understand!

Why should people be excited about wine?
Chances are you make better friends through wine. There is a wine for everyone and for every palate. You can like it full, dry, or fruit forward… Once you discover that, you will keep on discovering again and again. There is always something to find out, whether it is a story, an unexpected taste or an unbelievable smell. It’s a never-ending journey, and that’s what is amazing with wine!
